Ingredients

2 Tbsp coconut flour

1 large egg 

½ cup blanched almond flour

½ cup crushed pork rinds

2 tsp Italian seasoning

½ tsp garlic powder 

salt and pepper to taste

11 pieces mozzarella string cheese

Directions:

  1. Preheat oven to 400 degrees F / 204 degrees C.

  2. In a small bowl, place coconut flour. In a second small bowl, beat egg. Mix almond flour, crushed pork rinds, Italian seasoning, garlic powder, and salt and pepper in a third bowl.

  3. Take each piece of mozzarella string cheese and dredge in coconut flour, then dip in egg wash, shaking off any excess. Roll in almond flour mixture until well coated, then place on a lined baking sheet. Repeat with all mozzarella pieces, ensuring they don’t touch each other.

  4. Place baking sheet in freezer for at least one hour or until ready to bake. This step prevents cheese from oozing during baking.

  5. Once ready to bake, place frozen mozzarella sticks on a lined baking sheet, preferably on second-lowest rack.

  6. Bake for four to five minutes, until bottom side is golden. Carefully flip each mozzarella stick and bake for an additional three to four minutes or until golden brown.

  7. Serve cheese sticks hot with your favorite keto dipping sauce, such as marinara sauce or low-carb ranch.
