Pork Rind Nachos

Pork Rind Nachos

Serves: 2 servings

Per serving: 600 calories, 55 g protein, 4 g carbohydrates, 50 g fat

Ingredients

Ground Beef - 3-6 ounces

Cheese - 3 ounces

Pork Rinds - 2 cups

Taco Seasoning - 2 tablespoons, or make your own

Toppings of your choice:

Guacamole

Olives

Tomatoes

Directions:

Preheat your oven to 350 degrees.

This dish is really simple to throw together.  The most important part is making sure to sear your hamburger meat at a medium-high heat in about 1 tablespoon of oil (safflower oil or avocado oil works great).  Get your pan hot first, then add the oil and meat.  Once your meat is cooked thoroughly, add seasoning.

In a casserole dish, build your nachos.  Pork rinds, meat, shredded cheese.

Bake in oven until cheese is melted.

Add toppings of your choice.  We used guacamole, olives, tomatoes!
