Ingredients
Wet
- 2 large eggs
- ½ cup heavy cream
- 4 chicken drumsticks
- 4 chicken thighs
Dry
- 3/4 cup almond flour
- 1½ cups finely crushed pork rinds
- ½ cup grated Parmesan
- 1 tsp garlic powder
- ½ tsp paprika
Spicy Mayo
- ½ cup mayo, sugar-free
- 1½ tsp hot sauce
Directions:

Preheat oven to 400 degrees F.

In medium mixing bowl whisk eggs and cream together.

Add chicken to the egg and cream mixture.

In a separate bowl mix dry ingredients.

Dredge chicken pieces in dry mix, coating well; you might have to press the coating onto the chicken.

Place dredged chicken on a baking tray and bake for 15 to 18 minutes.

Mix mayo and hot sauce together. Drizzle over chicken after chicken comes out of the oven, and enjoy.
