Oven-Baked Keto Chicken with Spicy Mayo

Per serving: 305 calories, 0 g protein, 6 g carbohydrates, 29 g fat

Ingredients

Wet

  • 2 large eggs
  • ½ cup heavy cream

 

  • 4 chicken drumsticks
  • 4 chicken thighs

 

Dry

  • 3/4 cup almond flour
  • 1½ cups finely crushed pork rinds
  • ½ cup grated Parmesan 
  • 1 tsp garlic powder
  • ½ tsp paprika

 

Spicy Mayo

  • ½ cup mayo, sugar-free
  • 1½ tsp hot sauce

Directions:

  1. Preheat oven to 400 degrees F.

  2. In medium mixing bowl whisk eggs and cream together.

  3. Add chicken to the egg and cream mixture.

  4. In a separate bowl mix dry ingredients.

  5. Dredge chicken pieces in dry mix, coating well; you might have to press the coating onto the chicken.

  6. Place dredged chicken on a baking tray and bake for 15 to                                                                                                                                                                                                 18 minutes.

  7. Mix mayo and hot sauce together. Drizzle over chicken after chicken comes out of the oven, and enjoy.
