Ingredients

Cake:

cooking spray

3 large eggs

1½ cups blanched almond flour

¼ cup cocoa powder

2 Tbsp dark Dutch cocoa powder

⅓ cup erythritol, granulated

1½ tsp vanilla extract

⅓ cup almond milk

½ tsp baking powder

 

Cream cheese frosting:

4 oz cream cheese, room temperature

½ cup erythritol, powdered

1 tsp vanilla extract

Directions:

  1. Preheat oven to 350 degrees F /177 degrees C. 

  2. Grease 8-inch round cake pan with cooking spray.

  3. In large mixing bowl, blend eggs, almond flour, cocoa powder, Dutch cocoa, erythritol, vanilla extract, almond milk, and baking powder until well combined. 

  4. Pour batter into prepared cake pan and spread evenly.

  5. Bake for 15 minutes or until toothpick inserted in center comes out clean.

  6. While cake is cooling, combine cream cheese, erythritol, and vanilla extract in medium bowl until smooth.

  7. Once cake has cooled, slice into quarters. 

  8. Generously spread cream cheese frosting on each quarter and stack them, smoothing additional frosting on top for a beautifully frosted finish.
