Ingredients

Dressing:

1 egg

1 oz lemon juice

1 tsp garlic, minced

1 Tbsp whole-grain mustard

¼ tsp sea salt

¼ tsp black pepper

½ tsp paprika 

½ cup olive oil

 

Salad:

1½ cups broccoli florets, steamed

1½ cups cauliflower, steamed

½ red onion, diced

6 slices bacon, crumbled

Directions:

  1. In small bowl, mix egg, lemon juice, garlic, mustard, salt, pepper, and paprika.

  2. Using hand mixer, blend until well blended.

  3. Gradually add olive oil and continue to mix until emulsified.

  4. Place broccoli and cauliflower in large mixing bowl.

  5. Add dressing, onion, and bacon and mix together until well combined.

  6. Serve chilled or at room temperature.
