Keto Alfredo Chicken Casserole

Per serving: 466 calories, 33 g protein, 6 g carbohydrates, 32 g fat

Ingredients

  • ½ cup Parmesan cheese, grated
  • ½ cup heavy whipping cream
  • 8 oz cream cheese, softened
  • ½ tsp basil
  • ½ tsp salt
  • ½ cup yellow onion, chopped
  • 16 oz cauliflower florets, chopped
  • 1 cup spinach frozen (or 2 cups fresh), chopped
  • 2 Tbsp fresh garlic, minced
  • 2½ cups cooked and chopped chicken
  • 1½ cups mozzarella cheese, shredded

 

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine all ingredients except half of the mozzarella cheese. Reserve half of the cheese to top the casserole.
  3. Place mixture in an 8 x 12” baking casserole and top with the remainder of the cheese. Bake for 20 minutes until golden brown on top.
