Keto Alfredo Chicken Casserole

Ingredients
- ½ cup Parmesan cheese, grated
- ½ cup heavy whipping cream
- 8 oz cream cheese, softened
- ½ tsp basil
- ½ tsp salt
- ½ cup yellow onion, chopped
- 16 oz cauliflower florets, chopped
- 1 cup spinach frozen (or 2 cups fresh), chopped
- 2 Tbsp fresh garlic, minced
- 2½ cups cooked and chopped chicken
- 1½ cups mozzarella cheese, shredded
Directions:
- Preheat oven to 350 degrees F.
- In a large bowl combine all ingredients except half of the mozzarella cheese. Reserve half of the cheese to top the casserole.
- Place mixture in an 8 x 12” baking casserole and top with the remainder of the cheese. Bake for 20 minutes until golden brown on top.
