Easy And Delicious Chicken Tortilla Soup Recipe To Try This Fall

Ingredients
- 3 oz skinless chicken breasts, shredded
- 2 tbsp cheese
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 cup chicken broth
- 1 ½ tbsp onion
- 1 ½ tbsp carrots
- 1 ½ tbsp celery
- 1 tbsp tomato paste
- ¾ medium avocado
- 1 tbsp sour cream
- scallion (garnish)
Directions:
Place olive oil, onion, carrots, and celery in a saucepan or a large pot.
Turn pressure cooker to medium-low heat and cover. Cook it on low for 10 minutes.
Add tomato paste and smoked paprika. Cook on low for 5 minutes.
Add broth and chicken. Cook for 10 mins.
Add salt/pepper to taste. Garnish with scallions or fresh cilantro.
Ladle soup in a bowl and serve with avocado and cheese crackers/sour cream.
