Chicken Nuggets for Kids

Ingredients

Chicken Tenders - 3-6 oz.

Pork Rinds - about 3 cups

Coconut Flour or Almond Flour - 1-2 cups (just enough to coat your chicken)

Eggs - 2 large + 2 tablespoons water

Oil - about 2 cups (make sure to use an oil with a high smoke point - avocado oil works great.  Stay away from extra virgin olive oil or coconut oil - it has a low smoke point, so it will burn @ 350 degrees)

Directions:

Cut chicken in nugget sized pieces

Run pork rinds through a blender or food processor.  Make sure that you get a uniform consistency for best breading results.

Coat chicken completely in coconut flour - making sure that every inch is covered.  This will make sure that your breading doesn’t fall off of the chicken.

Beat eggs and add water.  Completely coat chicken in egg wash.  Then cover in pork rinds.

Bread all chicken,

In a sauce pot or deep fryer, bring oil up to 350 degrees over medium heat.

Carefully drop 2-3 nuggets into the oil at a time.  Make sure not to overcrowd your pan or deep fryer, this will bring down the temp of the oil too quickly and you will end up with mushy breading.  You want to try to keep your oil consistently at about 350 degrees throughout this process.

Cook until internal temperature is 165 degrees.

Serve with veggies and ranch!
