Ingredients

  • 3 slices keto bread thin
  • 1 tablespoon mayonnaise
  • 3 leaves romaine lettuce cut into 2-inch pieces
  • 2 slices bacon cut into 6 equal portions
  • 6 cherry tomatoes thinly sliced
  • ½ red bell pepper sliced into strips

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • Place bacon on lined baking sheet and bake for 20 to 25 minutes or until crispy.
  • Use small round cookie cutter or top of spice jar to cut 3 slices keto bread into small rounds.

  • Layer equal portions of 1 tablespoon mayonnaise, 3 leaves romaine lettuce, 2 slices bacon, and 6 cherry tomatoes between bread rounds.

  • Serve with ½ red bell pepper.

These mini-BLTs will be a hit with your kids.  Modify them based on your family’s likings.  Maybe you will have to make some without tomatoes or without mayo, be creative!  Use our keto bread recipe for the mini-bread.  We made the keto bread, sliced it thin, and used the top of a spice container to cut the mini-bread!
