Beef Fajita Bowl

Beef Fajita Bowl

Serves: 1

Per serving: 800 calories, 33 g protein, 9 g carbohydrates, 65 g fat

Ingredients

Steak - 3-6 oz

Safflower Oil - 1 tablespoon, for cooking steak

Egg - 1 large

Butter - 2 tablespoons 

Avocado - 1/2 medium

Bell Pepper - 1 large

Onion - 1/4 medium

Tomato - 1/cup

Spices - be creative - cumin, onion powder, garlic powder

Cilantro - for garnish

Lime - for garnish

Directions:

For Steak:

Cut steak into thin strips.  

Season the steak with salt and seasonings of your choice.

Get a pan hot, over medium-high heat.

Add safflower oil to hot pan, gently add meat.  Make sure your pan is hot!  A steak gets a lot of its flavor from the initial sear.

 

For veggies:

Chop veggies into strips.  Cut tomato into small pieces.

In a separate pan over medium heat, melt down butter.

Add veggies (except tomatoes).  Cook slowly until veggies are desired texture.

Start buliding your plate.  Add veggies and tomatoes.  Add steak.  Add avocado.

Garnish veggies with cilantro and lime.

For egg:

Over medium heat, melt down butter.

Fry one egg.  If you want perfect sunny side up eggs, cook it low and slow.  

To make sure that the egg is fully cooked, you could cover it with a lid for one minute for sunny side up.

Enjoy buttery steak with bell peppers and onions with a fried egg on top!!
