My weightloss and the different ways I eat Cauliflower

In the spring of 2018, I found Dr. Berg's information online and within 4 months dropped 60lbs. I've come to love many keto staple meals. But I LOVE to cook so some people may think it's too much work. One food, in particular, is the many variations of meals I do with Cauliflower. Let me share a few meals I prepare for my wife and I often: Pizza Stir Fry: Ingredients/instructions: 1 500 mg bag of riced cauliflower (You can but it pre-riced or you can just put it in your food processor). Cook in a large frying pan on medium to high heat for 7-10 minutes with olive oil. Anything you enjoy on a pizza (bell peppers, hot peppers, pepperoni, pre-cooked bacon, pre-cooked chicken); once the rice has cooked for 7-10 minutes, add your toppings and saute them for 2-4 minutes on medium to high. Shred 2 cups of cheese (cheddar or mozzarella). Turn down the heat to 2 or 3 and melted the cheese in the stir fry. Lastly, spread salt, pepper, garlic salt and oregano to taste (lots of oregano is yummy). And enjoy! Mashed Cauliflower: Ingredients/instructions: Boil a head of cauliflower in a pot of water for 15 -20 minutes. You'll know it's ready when you can pierce a fork through a stem-like butter. Use a strain to rid of the hot water and place cauliflower in a large mixing bowl. Add 1/2 cup of melted butter. Add 1/2 of cream cheese. Use a hand stick blender to mash it into a smooth consistency. Add salt, garlic to taste. And enjoy! Cheesy Caulflower Rice: Cook 1 500 mg bag of Riced Cauliflower separately on a pan in olive oil for 7-10 minutes on medium to high heat. In a pot, on medium heat, boil 3/4 cup of whole whipping cream. Add 2 cups of shredded cheddar cheese. Add 1/2 cup of cream cheese.. Melt and whisk these ingredients together. Add a tsp of dijon mustard. Add salt and garlic to taste. Add 1 chopped onion to your separate pan once the cauliflower has cooked for 7-10 minutes. Allow onion to cook for a minute. Add your cheese sauce to the cauliflower and let it simmer for 5-6 minutes. And enjoy!
