Vegan Fried Cauliflower

Ingredients
Cauliflower - 1 1/2 cups
Safflower Oil - 1 to 2 cups - non-GMO for frying
Parsley and/or Cilantro - picked, some stems are okay
Marcona Almonds - 1/4 cup (measured when whole)
Lemon Juice - 1/4 medium lemon
Salt - 1 teaspoon
Directions:
Cut cauliflower into small-medium florets. Chop almonds.
If you have a deep fryer, using non-GMO safflower oil, fry cauliflower at 350 degress until golden brown.
If you don't have a deeper fryer, fill a sauce pot with oil. Leave on medium-high heat for 5-6 minutes. Make sure that you have enough oil for the cauliflower to "swim" in... this will prevent burning. If you have a meat thermometer, make sure that the oil is at 350 degrees. Drop cauliflower into the oil and let fry until golden brown, remove from oil and have a "landing" ready with paper towel on a plate. Salt heavily and immediately, so that the salt still sticks because of the hot oil. The salt is very important in this dish.
Add salted cauliflower to a bowl, squirt with lemon juice. Add picked herb and almonds. Gently mix.
Smear tahini on a plate. Plate the cauliflower on top of the tahini.
Tips
Marcona Almonds are delicious and have a unique flavor. The are more tender, sweet, and delicate. Try them out with fried cauliflower and lemon!
If you'd like to roast your cauliflower instead of frying, you could do that in you oven at 450 degrees. Make sure that you use plenty of oil to get that golden brown coloe. Frying is great because it's fast and simple as logn as you're using non-GMO oil.
