Vegan Cauliflower Soup

Ingredients
Cauliflower - 1/2 medium head
Safflower Oil - 1 tablespoon
Onions - 1/4 medium
Vegetable Broth - about 1 cup
Coconut Milk - about 1/3 cup
Seeds - for garnish
Parsley - for garnish
Directions:
Cut up cauliflower into small florets. Chop onions.
In a sauce pot, add oil and onions. Cook on low for 5-7 minutes. You don’t want to get too much color on the onions, you want to slowly “sweat” out the flavor.
Add vegetable broth.
Add cauliflower florets. Cook until the cauliflower is soft.
In a heat-safe blender, add cauliflower, onion, and broth mixture. Blend on high.
Add coconut milk to taste and continue to blend until desired consistency. This recipe ended up using about 1/3 cup of coconut milk
Salt and pepper to taste.
Garnish with seeds and parsley!
