Ingredients

cooking spray 

2 Tbsp almond flour

1 Tbsp coconut flour 

2 Tbsp erythritol 

½ tsp baking powder 

dash of cinnamon 

1 large organic egg 

1 tsp coconut oil 

1 tsp unsweetened almond milk 

3 Tbsp blueberries, frozen

Directions:

  1. Preheat oven to 350 degrees F / 177 degrees C.

  2. Grease mini muffin pan or mini muffin cups with cooking spray.

  3. Combine almond flour, coconut flour, erythritol, baking powder, and cinnamon in mixing bowl.

  4. In separate bowl, beat egg with coconut oil and almond milk until well combined.

  5. Pour wet ingredients into dry ingredients and mix well.
