Ketogenic Pigs in a Blanket

Per serving: 500 calories, 31 g protein, 4 g carbohydrates, 38 g fat

Ingredients

Grass-fed Sausage - 2 large

Shredded Mozzarella - 1/2 cup

Cream Cheese - 1 oz.

Almond Flour - 1/cup

Psyllium Husk - 2 teaspoons (this helps to create a "fluffy" texture)

Egg - 1 large

Directions:

Preheat oven to 350 degrees.

In a bowl, add shredded mozzarella and cream cheese.

Melt down and mix well.

In a separate bowl, mix almond flour and psyllium husk.

Add egg (make sure that your cheese mixture is not hot, you don’t want to cook the egg with residual heat).

Knead the dough.  Refrigerate for 10 minutes - this will make it easier to work with.

Roll out about ¼ inch thick on parchment paper or silicone baking mat with some extra almond flour to avoid sticking.

If you are using a silicone baking mat, use a non-sharp object to make 1 ½ inch thick strips.

Roll and wrap your sausages.

Bake for 25-30 minutes.
