Ketogenic Mozzarella Sticks

Ingredients
Organic Mozzarella Cheese Sticks - 3 each
Pork Rinds - 1 cup, ground
Egg - 1 large
Almond Flour - ¼ cup
Safflower Oil - 1-2 cups, if frying cheese sticks
Marinara Sauce - for dipping, make sure to use a low-carb sauce
Directions:
Preheat your oven to 350 degrees, if you are planning on baking the cheese sticks.
Grind pork rinds in a food processor or blender.
In 3 large dishes, set up your breading station: almond flour, beaten egg, ground pork rinds.
Dip your cheese stick into the egg mixture.
Dip it into the almond flour.
Return to egg mixture.
Finally, dip in ground pork rinds. Make sure that your pork rinds are ground small and even.
You might see some patches that do not have breading on them. You should be able to gently pat breading onto any part of the cheese that is not breaded.
Place in freezer for 10-15 mins on parchment paper. This will help the cheese sticks keep their shape especially if you deep fry them!
Bake in oven @ 350 degrees for about 20 mins (this will depend on your oven) or fry in non-GMO oil.
Serve with your child's favorite berries or vegetables!
Use a low-carb Marinara sauce!
