Ketogenic Hush Puppies

Ketogenic Hush Puppies

Per serving: 345 calories, 7 g protein, 6 g carbohydrates, 31 g fat

Ingredients

For Hush Puppies:

Almond Flour - 1 cup

Baking Powder - 1 tablespoon

Garlic Powder - 1/2 tablespoon

Cheddar Cheese - 1/2 cup

Egg - 1 large

Half and Half - 1/2 cup

Stevia - 8-10 drops

Scallions - 4 

Salt - a pinch

Oil (for frying) - 2 cups (make sure to use an oil with a high smoke point - such as avocado oil.  Do not use extra virgin olive oil or coconut oil - these burn at a much lower temperature.)

For Dipping Sauce:

Mayo - 2 tablespoons

Sour Cream - 1/4 cup

Chili Sauce (like Sriracha) - 1 tablespoon

Directions:

In a bowl, mix together almond flour, baking powder, garlic powder.

Add cheese, egg, half and half, and Stevia.

Chop scallions and add them to the mixture.  Add a pinch of salt.

In a saucepot, add about 2 cups of oil.  Over medium heat, bring it up to 350 degrees.  A meat thermometer would be very useful.

Using a tablespoon sized scooper, add mixture to oil.

Cook until golden brown on the outside.  Check the inside.  If it is still raw on the inside, finish cooking them in the oven at 400 degrees, so that you do not burn the outside of the hush puppy.

For dipping sauce, mix sour cream, mayo, and chili sauce.
