Ingredients
Bacon - 4 slices (save the bacon fat)
Onion - ½ medium
Collard Greens - 8-10 cups
Chicken Broth - 1 cup
Apple Cider Vinegar - 2 tablespoons
Directions:
Preheat oven to 350 degrees. Bake bacon for 25-30 minutes.
Save the bacon fat.
Chop onion.
In a large sauce pot, add bacon fat (at least 2-3 tablespoons) and onions. Cook on low for 10 minutes.
Add collard greens. Add 1 cup chicken broth. Cover cook for 20-25 minutes, stirring occasionally.
While greens are cooking, chop the bacon.
Add apple cider vinegar and salt. Add about 2/3 of bacon to greens. Save the other 1/3 for garnish.
