Ketogenic Buffalo Cauliflower Bites

Ingredients
Cauliflower - about 1/2 head, cut into small florets
Pork Rinds - 2 cups
Eggs - 2 large
Garlic Powder - 1/2 teaspoon
Chili Sauce - 1/3 cup
Butter - 1/4 cup
Directions:
For Cauliflower Bites:
Break cauliflower into small florets into a bowl.
Beat 2 eggs. Add eggs to cauliflower. Make sure that all cauliflower is covered in egg.
Add 1/2 teaspoon garlic powder. Mix well.
In a food processor or blender, grind down pork rinds.
Coat cauliflower in pork rinds.
Bake @ 450 degrees for 25-30 minutes. Cauliflower should be cooked all the way, but still firm.
Place cauliflower in a bowl.
For Buffalo Sauce:
Melt down butter over medium-low heat.
Add chili sauce (like sriracha). Mix well.
Pour sauce over cauliflower.
Slice green onion for garnish.
Serve with ranch or bleu cheese dressing.
