  • 3 shredded zucchini medium-sized
  • 1 teaspoon sea salt
  • 2 eggs large
  • ยผ cup feta cheese crumbled

  • 2 cloves garlic minced
  • 2 green onions finely chopped
  • ยผ teaspoon ground black pepper
  • ยฝ cup almond flour
  • 1 tablespoon butter
  • ยผ teaspoon chili powder
  • ยผ onion powder

Take your veggies to the next level with these Keto Zucchini Fritters. Each one is perfectly crisp and the perfect side to any protein.

Instructions

  • In large bowl, combine 3 shredded zucchini and 1 teaspoon sea salt. Set aside for 10 minutes.

  • After 10 minutes drain water from zucchini by squeezing it with your hand and discarding liquid.
  • In zucchini bowl add 2 eggs, ยผ cup feta cheese, ยผ cup mozzarella cheese, 2 cloves garlic, 2 green onions, and ยผ teaspoon ground black pepper. Mix well.

  • Stir in ยฝ cup almond flour until fully combined.

  • Preheat large skillet to medium-high heat. Add 1 tablespoon butter.

  • Scoop one spoonful of batter into pan for each fritter, enough to cook three fritters at a time. Cook 2 to 3 minutes per side until golden, crispy and cooked through.
  • Top with ยผ teaspoon chili powder and ยผ onion powder to taste. Transfer to plate or pan and repeat with remaining batter.
