Keto Zucchini Au Gratin Recipe

Ingredients

  • 4 cups zucchini, sliced
  • ¼ cup onion, thinly sliced
  • ½ tsp garlic powder
  • 1 tsp oregano
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ cup heavy whipping cream
  • 1½ cups pepper jack cheese
  • ¼ tsp xanthan gum

Directions:

  1. Preheat oven to 350 degrees F. Line a 4 x 8-inch baking pan with parchment.
  2. Put all ingredients into a medium bowl and mix well.
  3. Pour mixture into baking dish; bake for 20 minutes or until golden brown.
