Keto French Onion Chicken Casserole

Ingredients

5 cups onion, sliced

3 chicken breasts

2 tsp garlic powder

1 cup pepper jack cheese, shredded

1 cup cheddar cheese, shredded

3 Tbsp ghee, melted

3 cloves garlic, minced

1 cup chicken broth

2 Tbsp parsley, chopped

1 tsp paprika

1 tsp dried oregano

½ tsp chili flakes

Directions:

  1. Preheat oven to 400 degrees F (204 degrees C).

  2. Caramelize sliced onions over low heat for 15 minutes, stirring occasionally until they become a rich caramel color. Set aside and let cool.

  3. Place chicken breasts in casserole dish, side by side.

  4. In a medium bowl, combine garlic powder, shredded cheeses, melted ghee, minced garlic, chicken broth, chopped parsley, paprika, oregano, and chili flakes. Mix well.

  5. Pour mixture over chicken breasts into prepared baking dish.

  6. Top with cooled caramelized onions. 

  7. Bake for 15 to 20 minutes, until topping is golden brown and chicken reaches an internal temperature of 165 degrees F (74 degrees C).

  8. Let cool for a few minutes before serving with crispy fried onions.
