Total Time: 30 minutes

Serves: 6

Per serving: 123 calories, 3.9 g protein, 12.1 g carbohydrates, 7.4 g fat

Ingredients

  • 1 ¼ cup / 150 g blanched almond flour

  • 6 Tbsp psyllium husk powder

  • 1 tsp baking powder

  • 1.5 tsp salt

  • 4 egg whites

  • 1/2 cup / 120 ml boiling water

  • 2 Tbsp olive oil for frying

Directions:

  1. Combine almond flour, psyllium husk powder, baking powder, and salt in a mixing bowl or food processor.

  2. Add egg whites and mix until well combined.

  3. Gradually pour in boiling water and continue mixing until a dough forms. The dough should be pliable but not sticky.

  4. Divide dough into six equal parts and roll each into a ball.

  5. Place dough ball between two pieces of parchment paper and use a rolling pin to flatten dough to about 1/8 inch thickness.

  6. Heat a non-stick pan or tortilla press to medium heat and lightly grease with oil.

  7. Carefully transfer flattened dough onto pan and fry for 20 to 40 seconds on each side or until slightly browned.

  8. Remove from heat and repeat with remaining dough balls.

  9. Serve tortillas warm or store in an airtight container for later use.

Recipe tips:

  • Add two tablespoons of olive or avocado oil to the dough mixture for a softer and more pliable tortilla.

  • To add more flavor, add herbs and spices such as garlic powder, onion powder, or chili flakes to the dough.

Ingredients

This tortilla recipe uses simple and easy-to-find ingredients that are gluten-free and keto-friendly.

The star of the show is blanched almond flour, which provides a soft and chewy texture and is an excellent wheat flour alternative that offers many health benefits.

Research published in Journal of Agricultural and Food Chemistry found that almonds are rich sources of healthy fats, fiber, vitamins, minerals, and phytonutrients, which can help lower cholesterol levels and improve heart health.

The study further suggests that almonds may positively impact weight, blood sugar control, inflammation, and oxidative stress, potentially reducing risks of cardiovascular disease and diabetes.

Other ingredients, such as psyllium husk powder and egg whites, help bind the tortilla dough and give it elasticity.

"Psyllium husk powder is one of the best sources of soluble and insoluble fiber," explains Dr. Berg. "Fiber helps improve digestion, prevents constipation, and promotes the growth of beneficial gut bacteria."

Baking powder is used to add leavening and fluffiness to the tortillas, and adding boiling water helps form a pliable dough that can be easily rolled out to create the perfect tortilla shape.

Storage tips

Once you've made your batch of keto tortillas, storing them properly is essential to maintain their freshness and texture.

Before storing, let the tortillas cool completely and pack them in an airtight container or ziplock bag. They can be kept at room temperature for up to three days or in the fridge for up to seven days.

To reheat, place tortillas into a hot skillet for 20 to 40 seconds on each side until warm and pliable. If you’re craving crispier tortillas, simply extend the heating time.

For longer storage, you can freeze these tortillas for up to three months. Just place parchment paper between each tortilla before freezing to prevent them from sticking together.

Save yourself from purchasing pricey store-bought keto tortillas that often contain additives or highly processed ingredients by trying this simple recipe at home.
