Keto Tiramisu

Ingredients

Keto ladyfingers

  • 4 egg yolks
  • 1 cup powdered erythritol
  • 1 tsp vanilla extract
  • 4 egg whites
  • 1 tsp baking powder
  • 1¼ cup almond flour
  • 4 oz melted unsalted butter

 

Mascarpone cream

  • 10 oz mascarpone cheese
  • 4 Tbsp powdered erythritol
  • 1 tsp orange zest
  • 2 cups heavy cream, whipped

 

Garnishes

  • 1 cup coffee
  • 4 Tbsp cocoa powder

Directions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment.

  2. In a large mixing bowl whip egg yolks with powdered erythritol and vanilla until yolks become a pale yellow in color. Set aside.

  3. In another bowl whip egg whites and baking powder until stiff peaks form.  

  4. Fold together yolks, whites, almond flour, and melted butter. 

  5. Spread evenly over the lined baking tray. Bake for 10 to 12 minutes and let cool.

  6. In a large bowl mix mascarpone cheese, erythritol, whipped cream and orange zest.

  7. Now it's time to build the tiramisu. Place half of the mascarpone mixture in the bottom of an 8 x 8” casserole dish and spread evenly. 

  8. Cut the ladyfingers into 3-inch strips and brush with coffee.  The more soaked the ladyfingers are the better. Place the soaked lady fingers in the casserole dish and cover with the remaining mascarpone mix. Spread evenly. 

  9. Sprinkle with cocoa powder and refrigerate for 3 hours before serving to allow the dish to set up.
