Instructions
Keto ladyfingers
- Preheat oven to 350 degrees F / 177 degress C. Line baking sheet with parchment paper.
- In large mixing bowl whip 4 egg yolks with 1 cup erythritol and 1 teaspoon vanilla extract until yolks become pale yellow in color. Set aside.4 egg yolks, 1 cup erythritol, 1 teaspoon vanilla extract

- Spread evenly over lined baking tray. Bake for 10 to 12 minutes and let cool.
Mascarpone cheese
- In large bowl mix 10 ounces mascarpone cheese, 4 tablespoons erythritol and 1 teaspoon orange zest. Set aside.10 ounces mascarpone cheese, 4 tablespoons erythritol, 2 cups whipped heavy cream, 1 teaspoon orange zest
- In medium bowl, add 2 cups whipped heavy cream. Whip until soft peaks form.
- Fold mascarpone mixture to cream.
Assembly
- Cut ladyfingers into three-inch strips and brush with 1 cup coffee.1 cup coffee
- Place half of mascarpone mixture in bottom of 8 x 8 casserole dish and spread evenly.
- Place soaked lady fingers on mascarpone mixture and cover with remaining mascarpone. Spread evenly.
- Sprinkle with 4 tablespoons cocoa powder and refrigerate for three hours before serving to allow dish to set.4 tablespoons cocoa powder
