Crispy Keto Popcorn Chicken Recipe

Ingredients

  • 1 lb / .45 kg boneless, skinless chicken breasts

  • 1 cup / 236.6 mL heavy cream

  • ¼ cup / 60 mL coconut flour

  • ¼ tsp / 1.25 mL sea salt 

  • 1/8 tsp / .6 mL ground black pepper

  • 1 large egg

  • 2 cups / 473 mL crushed pork rinds 

  • 1 tsp / 5 mL onion powder

  • ½ tsp / 2.5 mL garlic powder 

  • ½ tsp / 2.5 mL smoked paprika

Directions:

  1. Cut chicken into bite-sized pieces and place in a bowl. Pour heavy cream over chicken, ensuring it’s fully submerged. Cover and refrigerate for 24 hours.

  2. When ready to cook, preheat oven to 425 degrees F (220 degrees C). Line baking sheet with parchment paper or silicone baking mat.

  3. Set up three shallow bowls.

  4. In the first bowl, combine coconut flour, salt, and pepper. Crack egg into second bowl and whisk it with a fork. Mix pork rinds, onion powder, garlic powder, and smoked paprika in third bowl.

  5. Dredge each piece of chicken in coconut flour mixture, then dip into egg wash, and finally coat with pork rind mixture.

  6. Place breaded chicken on a single layer on the prepared baking sheet.
