Keto Pepperoni Pork Rind Chicken Bites

Ingredients
- 2 oz / 70 g pork rinds
- 3 large eggs
- 2 Tbsp water
- 1 lb boneless, skinless chicken breasts, sliced into 3-inch strips
- 2 cups / 473 mL olive oil
- 15 slices sandwich-style pepperoni
- 15 slices provolone
- ½ cup / 12 g fresh basil, torn into small pieces
Directions:

Place the pork rinds in a large plastic bag. Press out as much air as possible and seal the bag. Using a meat mallet or rolling pin crush the pork rinds into fine crumbs with no large pieces.

Combine the eggs and water in a medium bowl and whisk until white and yolk are thoroughly mixed.

Add 15 pieces of chicken to the egg mixture and stir to coat chicken completely.

Lay the pork rinds out on a sheet pan lined with parchment and place the chicken evenly onto the pork rinds. Move the chicken, flipping repeatedly to coat with the rinds. Remove from the pork rinds, set aside and repeat the process for the remaining pieces of chicken.

Heat oil in a pot with tall sides on medium-high heat for 3 to 5 minutes. Carefully drop 10 of the coated chicken pieces into the hot oil. Use a slotted spoon to gently move the chicken around in the oil so the pieces do not stick together. Cook chicken in the oil until lightly brown, for 3 to 5 minutes.

Remove chicken onto a paper napkin or paper towels to absorb any excess oil. Repeat the process for the remaining chicken.

To assemble, line a baking sheet with parchment and lay the pepperoni slices out evenly on it. Top pepperoni with provolone and add 2 to 3 pieces of basil.

To finish, place the cooked chicken onto the prepared pepperoni and roll tightly. Slide a toothpick completely through to prevent unrolling. Enjoy!
