Keto Pan Seared Pork Chop with Chimichurri Recipe

Ingredients
- 2 bone-in pork chops (10 to 12 oz each)
- ½ tsp sea salt
- ½ tsp black pepper
- 1 tsp parsley, chopped
- 1 tsp thyme, chopped
- 1 tsp olive oil
Chimichurri Sauce (2 portions):
- ½ cup Italian parsley
- ½ cup cilantro
- 2 Tbsp onion, chopped
- 2 cloves garlic
- 2 Tbsp red wine vinegar
- ½ tsp chili flakes
- ½ tsp sea salt
- ¾ cup olive oil
Directions:
- Season pork chops on both sides with salt, pepper, parsley, thyme and olive oil. Set aside.
- Heat a large skillet over medium high heat.
- Sear pork chops on each side until golden brown. Depending on how thick your chops are, you might have to finish them in the oven. Cook until internal temperature is 155 to 160 degrees F.
Chimichurri sauce:
In food processer combine all ingredients for the chimichurri and blend well. Incorporate olive oil ¼ cup at a time.
