Keto Mixed Berry Mousse

Per serving: 261 calories, 2 g protein, 3 g carbohydrates, 26 g fat

Ingredients

  • 2 cups / 475 mL heavy cream
  • ¼ cup / 50 g erythritol sugar
  • 1 tsp lemon zest
  • ¼ tsp vanilla extract
  • ½ cup  / 65 g pecans, chopped
  • 1 cup / 220 g mixed berries

Directions:

  1. In a bowl mix cream and erythritol sugar. Whip with whisk until soft peaks start to form.

  2. Add lemon zest, vanilla, nuts and berries. Fold to combine. 

  3. Cover with plastic wrap and put in the refrigerator to set for at least 3 hours. 

  4. Serve when firm.
