Keto Mediterranean Cauliflower Rice

Serves: 4

Per serving: 200 calories, 6 g protein, 12 g carbohydrates, 16 g fat

Ingredients

  • 10 ounces of cauliflower florets
  • 2 Tbsp olive oil
  • 2 cloves minced garlic
  • ¼ tsp chili flake
  • ¼ tsp sea salt
  • ¼ tsp ground black pepper
  • 4 Tbsp chopped parsley
  • 1 Tbsp lemon juice
  • ½ cup sliced almonds
  • ½ cup grape tomatoes cut in half

Directions:

  1. In food processor pulse cauliflower florets into riced cauliflower.  You can also grate on a box grater if you don't have a processor.

  2. Heat large skillet over medium high heat.  Add olive oil.

  3. Brown cauliflower in skillet for 4 minutes. Add garlic, chili flake, salt, pepper, parsley and lemon juice.  

  4. Finish with sliced almonds and tomatoes and enjoy.
