Ingredients

  • 2 eggs large
  • 1 cup cheddar shredded
  • ¾ cup almond meal
  • ¼ cup green chilis chopped
  • ¼ cup bacon cooked
  • 2 cloves garlic chopped
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • cups cauliflower riced and steamed
  • 2 tablespoons jalapeños chopped, pickled

Instructions

  • Preheat oven to 400 degrees F. Grease small muffin pan. Silicone molds work best.
  • In a large bowl combine all ingredients and mix well.
    2 eggs, 1 cup cheddar, ¾ cup almond meal, ¼ cup green chilis, ¼ cup bacon, 2 cloves garlic, 1 teaspoon sea salt, ½ teaspoon black pepper, 2½ cups cauliflower
  • Spoon mixture into the muffin tins.
  • Make sure to press mixture into the muffin tins, packing each one well.
  • Bake for 20 to 25 minutes.
  • Allow to cool before removing from the muffin pans. You can garnish with more sour cream and pickled jalapenos.
