Instructions
- Preheat oven to 400 degrees F. Grease small muffin pan. Silicone molds work best.
- In a large bowl combine all ingredients and mix well.2 eggs, 1 cup cheddar, ¾ cup almond meal, ¼ cup green chilis, ¼ cup bacon, 2 cloves garlic, 1 teaspoon sea salt, ½ teaspoon black pepper, 2½ cups cauliflower
- Spoon mixture into the muffin tins.
- Make sure to press mixture into the muffin tins, packing each one well.
- Bake for 20 to 25 minutes.
- Allow to cool before removing from the muffin pans. You can garnish with more sour cream and pickled jalapenos.2 tablespoons jalapeños
