In a medium bowl, place contents of 1.44 ounce lime gelatin packet and add 1 cup hot water. Whisk to dissolve gelatin.

Portion lime gelatin mixture into 6 small glass jars and refrigerate for 30 minutes, until set.

In a bowl, whip ½ cup heavy cream with a whisk until thick. Add ¼ cup vanilla coconut collagen powder and whisk to incorporate.

Add 2 tablespoons coconut yogurt and stir to combine.

Top lime gelatin with whipped cream mixture and serve.
