Keto Lemon Garlic Butter Steak and Spinach

Ingredients

  • 1 2/3 lb / 750 g New York strip steak
  • 1 bag / 5 oz fresh spinach
  • 4 Tbsp / 59.2 mL butter
  • salt and fresh cracked pepper to taste
  • 4 garlic cloves, minced
  • juice of 1/2 lemon 
  • ½ tsp / 2.5 mL crushed red pepper flakes
  • ¼ cup / 60 mL low-sodium beef broth
  • 2 Tbsp / 29.6 mL chopped parsley
  • 2 Tbsp / 29.6 mL chopped chives

 

Steak marinade

  • 1 cup / 236.6 mL sugar-free fish sauce
  • 3/4 cup / 177.4 mL olive oil
  • 2 Tbsp / 29.6 mL sambal oelek

Directions:

  1. Combine the ingredients for the marinade in an airtight container or a Ziploc bag. Put the steak into the marinade, seal and allow to marinate in the refrigerator for 30 minutes to one hour. The longer it marinates, the more tender the meat will be!

  2. After marinating, bring the steak to room temperature.

  3. In the meantime, wash and drain spinach. Melt one tablespoon butter in a large skillet and cook spinach for 1 minute, turning occasionally, until just wilted. Set aside in a shallow plate and allow the cooking juices to drain. Quickly rinse and pat the skillet dry.

  4. Melt 2 Tbsp / 29.6 mL butter in the same skillet over medium-high heat. Pour off and reserve marinade juices for later, then add steak to skillet and season with salt and pepper. Sear steak for one minute, then quickly turn to cook the other side. Do not overcook – remove steak from skillet and set aside on a plate. 

  5. In the same skillet, add the last tablespoon of butter, then add garlic, lemon juice, red pepper flakes, beef broth, parsley, chives (reserving some parsley and chives for garnish) and the remaining marinade to the cooking juices. Bring to a simmer and allow to reduce for 1 to 2 minutes, stirring regularly.

  6. Add the steak back to the pan and adjust seasoning if necessary. Push steak aside in the skillet and stir in cooked spinach. Garnish with more chopped chives and parsley and serve immediately. Enjoy!
