Keto Flank Steak with Cauliflower and Broccoli Gratin

Ingredients
- 1 cup cauliflower florets, bite-size pieces
- 1 cup broccoli florets, bite-size pieces
- 1 cup oyster mushrooms
- 2 oz cheddar cheese
- ½ cup heavy cream
- 1 tsp salt
- ½ tsp black pepper
- 8 oz flank steak
- ½ tsp salt
- Pinch of pepper
- 1 tsp fresh thyme
- 2 Tbsp olive oil
Sauce:
- ½ cup heavy cream
- 1 Tbsp coconut amino
- ½ tsp black pepper
Directions:
Gratin
- Preheat oven to 350 degrees F. Line a 4 x 8” baking pan with parchment.
- In a medium bowl mix cauliflower, broccoli, mushrooms, cheddar, heavy cream, salt and pepper. Pour gratin mixture into lined baking pan. Bake until golden brown.
Steak:
- Season steak with salt and pepper. Place a medium skillet over medium high heat.
- Add olive oil and sear steak on both sides. Remove steak from heat once you have reached your desired temperature and save pan with oil and juices.
Pan Sauce:
- To the steak pan add heavy cream, coconut aminos, salt and pepper over low heat.
- Cook to reduce by half.
