Ingredients
Meatballs
½ cup / 118.3 mL chopped onion
3 cloves chopped garlic
1½ lbs / 700 grams ground pork
7 whole chopped brown mushrooms
1 tsp / 5 mL fine sage
1 tsp / 5 mL Himalayan salt
1 tsp / 5 mL black pepper
1 tsp / 5 mL basil
¼ cup / 60 mL blanched almond flour
3½ oz / 100 grams shredded mozzarella cheese
Tomato Sauce
1 lb / 500 grams crushed tomatoes
1 tsp / 5 mL chopped oregano
1 tsp / 5 mL chopped basil
½ tsp / 2.5 mL black pepper
½ tsp / 2.5 mL Himalayan salt
¼ tsp / 1.2 mL garlic powder
¼ tsp / 1.2 mL onion powder
½ cup / 118.3 mL purified water
3 oz / 80 grams shredded mozzarella cheese (topping)
Directions:

Preheat oven to 400 degrees F / 200 degrees C.

Thinly chop onion. Mince garlic. In a large bowl, mix all of the meatball ingredients including cheese and knead with hands until well-combined.

With your hands carefully form a big meatball, and throw it from one hand to another a couple of times to release the air. Once formed, place in an ovenproof dish. Repeat with remaining meatballs.

Once all meatballs are in the ovenproof dish, bake for 20 minutes. (Do not turn off oven.)

In a medium saucepan, combine the tomato sauce ingredients and simmer on medium heat for 10 minutes. The sauce should be pretty thick so make sure that it has considerably simmered down to thicken it.

Once the meatballs have cooked for 20 minutes, take the dish out of the oven, cover the meatballs with the tomato sauce, and then sprinkle the topping mozzarella over everything. Place in the oven again and bake for an additional 10 minutes (or until the mozzarella has a nice golden-brown crust).

Take out of the oven and serve hot.
