Total Time: 20 minutes

Serves: 8

Per serving: 255 calories, 14.1 g protein, 4.5 g carbohydrates, 20.8 g fat

Ingredients

1 Tbsp butter, melted

2 bunches of asparagus

2 Tbsp olive oil

3 cloves garlic, chopped

½ tsp chili flakes

¼ tsp sea salt

¼ tsp black pepper

2 cups cheddar cheese, shredded

1 cup white cheddar cheese, shredded

Directions:

  1. Preheat oven to 400 degrees F / 204 degrees C.

  2. Coat bottom of baking pan or casserole dish with melted butter.

  3. Wash and dry asparagus before removing tough ends of stalks.

  4. In large bowl, toss asparagus with olive oil, garlic, chili flakes, salt, and pepper until evenly coated.

  5. Layer asparagus in prepared baking dish and top with cheese.

  6. Bake for 12 to 18 minutes until cheese is melted and golden brown.

  7. Serve immediately and enjoy!

Recipe tips:

  • Add chopped bacon or prosciutto for an extra layer of savory flavor and a touch of crispiness.

  • If fresh asparagus is unavailable, use canned asparagus. However, choose preservative-free brands and drain well before cooking.

  • For a creamier version, incorporate cream cheese or a small amount of heavy cream into the spice mixture before baking.

  • It’s recommended to use shredded cheese, such as cheddar, Parmesan or mozzarella, to create a cheesy and bubbly finish.

  • Instead of carb-heavy panko bread crumbs, add crunched up keto-friendly pork rinds on top of the cheese if you prefer a crunchier texture.

Benefits of including asparagus in your keto diet

Asparagus is a nutrient-rich vegetable known for its distinct earthy flavor. It originates from the Mediterranean region and has been enjoyed since ancient times for its delicate taste and various health benefits.

Research published in Foods found asparagus to be a natural diuretic, aiding in the removal of excess fluids and promoting regular bowel movements.

Asparagus is also abundant in antioxidants, such as glutathione, which helps shield the body from oxidative stress and cellular damage, and plays a role in reducing chronic inflammation.

Furthermore, asparagus is low in carbs and has a high fiber content, making it an excellent option for those following a ketogenic diet.

According to the U.S. Department of Agriculture (USDA), one cup of raw asparagus contains 5.2 grams of total carbs and 2.8 grams of fiber.

Because of this high fiber content, one cup of asparagus contains only 2.4 grams of net carbs, which means it has minimal impact on your blood glucose or insulin levels.

In addition to its nutritional benefits, asparagus is remarkably versatile. It can be enjoyed roasted, grilled, or sautéed, and it also adds a delightful crunch to soups, stews, and stir-fries.

You can freeze this dish for up to two months, though the texture might change slightly after reheating. To reheat, preheat your oven to 375 degrees F (190 degrees C), cover the casserole with foil, and heat until warmed through.
