Ingredients

8 oz cream cheese, softened

¾ cup coconut flour

1 tsp stevia

½ tsp pure vanilla extract

1 tsp cinnamon

¼ tsp ground nutmeg

1 cup carrots, shredded

½ cup pecans, chopped

1 cup unsweetened coconut, shredded

Directions:

  1. Using a rubber spatula, mix cream cheese, coconut flour, stevia, vanilla extract, cinnamon, and nutmeg in a large bowl.

  2. Fold in grated carrots and chopped pecans.

  3. Roll mixture into 16 balls.

  4. Roll balls in shredded coconut until completely coated.

  5. Serve immediately or store in refrigerator for later.

Recipe tips:

  • If you run out of mixture when rolling the balls, check if any are oversized. If so, split it in half and re-roll.

  • Try lightly toasting the shredded unsweetened coconut before rolling the balls for an extra crunch.

  • Use your favorite keto cream cheese frosting recipe and drizzle on top for added fat and flavor.

  • Coconut flour can be replaced with almond flour if desired.

  • You can substitute stevia with monk fruit sweetener, manuka honey or homemade low-carb maple syrup.

  • Experiment with delectable ingredients such as sugar-free dark chocolate chips or diced apples for a keto-friendly twist on traditional carrot cake recipes.

Are you craving an after-meal treat that won't raise your blood sugar levels?

These Keto Carrot Cake Fat Bombs are filled with cream cheese, crunchy pecans, and a hint of cinnamon, satisfying your sweet tooth without interrupting ketosis.

Why you’ll love this keto-friendly recipe

These fat bombs are adapted from a regular carrot cake recipe, making them a delicious treat that will impress with rich flavors and excellent nutritional value.

Because Keto Carrot Cake Fat Bombs don’t contain wheat flour or sugar, they won't impact blood sugar levels, making them an excellent option for maintaining energy throughout the day.

Moreover, they pack a punch of health benefits due to coconut flour's high fiber content and the healthy fats found in cream cheese and pecans.

Cinnamon adds a delightful aroma and boasts anti-inflammatory properties that may help reduce the risk of chronic disease.

Carrots are an excellent source of beta-carotene, which can help promote better vision and immune function.

In addition, research published in Food and Nutrition Sciences found that carrots are rich sources of carotenoids, polyphenols, and vitamins with antioxidants and anticarcinogenic properties.

The study also suggests that carrots can help manage diabetes and lower heart disease risk while protecting the liver and kidneys.

What's more, including pecans in this recipe offers a satisfying crunch while providing antioxidants and heart-healthy monounsaturated fats.

You can also customize these keto cake bombs to your liking. For example, you can drizzle sugar-free cream cheese icing or sprinkle chopped walnuts on this decadent dessert.

Fat bomb ingredients

What are fat bombs?

Fat bombs are small, high-fat treats typically consumed as part of a meal rather than a standalone snack.

They are an excellent source of healthy fats, keeping you satiated for longer periods. This can be particularly beneficial for extending fasting intervals between meals.

Fat bombs contain mostly fats and minimal carbohydrates, and there is a wide choice of ingredients available to suit individual taste preferences and dietary needs.

Coconut oil, cream cheese, nut butter, avocado, and heavy cream are popular bases in many fat-bomb recipes.

They also often include different spices, nuts, seeds, and sugar-free powdered or liquid sweeteners to add different flavors and textures.

When to eat fat bombs

Although fat bombs aren’t a meal replacement, they can be a satisfying side dish.

"Ideally, one to two fat bombs should be consumed daily with a meal or as dessert after a meal," explains Dr. Berg. “Don’t eat fat bombs as snacks, as snacking can trigger cravings and cause weight gain.”

Fat bombs can be particularly beneficial for those new to Healthy Keto® or intermittent fasting as they help curb cravings and may prolong fasting times.

They can also serve as a pre or post-workout boost due to their high-fat content and quick energy release.

However, it’s crucial to remember that fat bombs have a high caloric value, and eating too many can hinder weight loss or cause weight gain.

If you are following keto or practicing intermittent fasting and hit a weight-loss plateau, it may be necessary to avoid extra fats, such as fat bombs or bulletproof coffees.

Placing food in the fridge

How to store Keto Carrot Cake Fat Bombs

To ensure your low-carb carrot cake fat bombs stay fresh and delicious, proper storage is crucial.

Fat bombs are best stored in an airtight container to prevent them from absorbing other flavors in your fridge or freezer.

If stored in the refrigerator, fat bombs can be kept for up to one week. Freezing is an excellent option for longer storage, keeping fat bombs fresh for up to six months.

Before freezing, place each fat bomb on a baking sheet to freeze individually, then transfer them to a container to prevent them from sticking together.

When you're ready to enjoy a fat bomb, allow it to thaw for a few minutes at room temperature for the best flavor and texture.

Due to their high-fat content, they’ll soften quickly, and it’s recommended that fat bombs are served chilled for the best experience.
