Keto Cabbage Cups

Serves: 12 (1 cabbage cup per serving)

Per serving: 156 calories, 19.4 g protein, 1.9 g carbohydrates, 7.6 g fat

Ingredients

Tomato Sauce

1 14-oz can / 400 g  pureed tomatoes

1 Tbsp / 14.8 mL apple cider vinegar

1 tsp / 5 mL red pepper flakes

1 tsp / 5 mL onion powder

1 tsp / 5 mL garlic powder

1 tsp / 5 mL dried oregano

Freshly ground black pepper to taste

1/4 cup / 60 mL extra virgin olive oil

 

Cabbage Cups 

12 cabbage leaves

1 lb / 450 g  ground beef (ground pork is optional)

¾ lb / 340 g  ground pork

1 cup / 236.6 mL riced cauliflower

½ tsp / 2.5 mL chopped parsley  

Freshly ground black pepper to taste

 

Directions:

FOR THE SAUCE:

  1. Preheat oven to 375 degrees F / 190 degrees C. 

  2. Puree tomatoes, apple cider vinegar, red pepper flakes, onion powder, garlic powder, and oregano in a blender; season with salt and pepper.

  3. In a large deep skillet (or large pot) over medium heat, heat oil. 

  4. Add pureed tomato sauce, bring to a simmer, then lower to medium-low and simmer for 20 minutes until slightly thickened.

 

FOR THE CABBAGE CUPS:

  1. Make filling: In a large bowl, combine ½ cup of tomato sauce with ground meats, cauliflower rice, and thyme. Season with salt and pepper.

  2. Evenly pack the 9-inch baking dish with the filling and spoon tomato sauce over the top.

  3. Bake for 45 to 55 minutes, until meat is cooked through and internal temperature reaches 150 degrees F / 66 degrees C.

  4. Fill cabbage cups evenly with filling.

  5. Garnish with more thyme before serving.
