Ingredients
- ½ lb / 227 g ground chicken
- ¼ cup / 60 mL egg whites
- ½ cup / 118.3 mL blue cheese, crumbled
- ½ cup / 118.3 mL green onions, chopped
- ½ cup / 118.3 mL buffalo sauce
- 1 tsp / 5 mL parsley, chopped
Directions:

Preheat oven to 400 degrees F / 204 degrees C. Line a baking sheet with parchment or a silicone mat.

Combine the ground chicken, egg whites, blue cheese, green onions, and ¾ of the buffalo sauce in a bowl. Form into balls and place on the lined baking sheet. Bake for 12 to 15 minutes, until done.

Put remaining buffalo sauce in a separate bowl.

Toss meatballs in sauce, making sure to fully coat.
