Ingredients
6 Tbsp butter, softened
2 Tbsp coconut shortening
¾ cup unsweetened chocolate chips
3 eggs
2 Tbsp monk fruit sweetener
3 Tbsp arrowroot powder
½ cup unsweetened chocolate chips
Directions:
Preheat oven to 350 degrees F / 177 degrees C.
Grease an 8-inch pan with butter.
Combine butter, coconut shortening, and unsweetened chocolate chips in a saucepan and cook over medium heat until mixture thickens, about 5 to 7 minutes.
In a separate bowl, mix eggs, monk fruit sweetener, and arrowroot powder until well combined.
Slowly pour chocolate mixture into egg mixture, stirring constantly to prevent scrambling eggs.
Add in remaining unsweetened chocolate chips and stir until evenly distributed.
Pour batter into prepared pan and smooth out top with a spatula.
Bake for 15 to 20 minutes, or until a toothpick inserted in center comes out clean.
Let cool before slicing and serving.
