Keto Broccoli Cheese Bites

Serves: 24

Per serving: 59 calories, 4 g protein, 1 g carbohydrates, 5 g fat

Ingredients

  • ½ cup frozen spinach
  • 2 heads broccoli, steamed and chopped 
  • ¼ cup scallions, sliced
  • 1 cup cheddar cheese, grated
  • ¼ cup Parmesan cheese, grated
  • ½ cup sour cream 
  • 1 tsp dried thyme
  • ¼ tsp sea salt
  • ½ tsp pepper
  • 2 large eggs

Directions:

  1. Preheat oven to 350 degrees F.

  2. In a medium bowl combine all ingredients and mix well.

  3. Press mixture into a 11 x 7” casserole dish.

  4. Bake for 25 minutes until golden brown.

  5. Let cool, cut into 24 squares and enjoy.
