Ingredients
5 slices bacon, cooked and chopped
4 whole eggs
½ cup / 118 mL tomatillo salsa
½ cup / 118 mL almond flour
¼ cup / 60 mL green pepper, diced and sauteed
Spray cooking oil.
Directions:

Preheat the oven to 350 F / 175 C. Grease 8 muffin cups with cooking spray.

In a bowl, combine all ingredients together and mix well using a rubber spatula or whisk.

Pour mixture into prepared muffin cups.

Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean—about 30 minutes. Let cool for 10 minutes before serving.
