Ingredients

  • 3 eggs large, hard boiled
  • 1 tablespoon sour cream
  • 1 tablespoon mayo
  • Salt and pepper to taste
  • 1 head romaine lettuce
  • 2 slices bacon cooked, for garnish

Instructions

  • In a bowl, mix together 3 eggs, 1 tablespoon sour cream, 1 tablespoon mayo.
  • Salt and pepper to taste
  • Cut off top 2/3 of 1 head romaine lettuce.  These will be your “wraps.”
  • Fill the lettuce with egg mixture.
  • Garnish with 2 slices bacon.  This recipe also garnished our wraps with pea shoot micro greens.
  • Serve with a few berries or a salad!
