Creamy Vegan Chocolate Avocado Pudding

Per serving: 180 calories, 3 g protein, 3 g carbohydrates, 16 g fat

Ingredients

Avocado - 2 medium

Unsweetened Cocoa Powder - 1/4 cup

Erythritol - 1/4 cup

Almond Milk - 1/4 cup

Stevia - to taste

Directions:

Peel avocados.  

First, mash in a large bowl with a fork.  This will make it easier to mix with an electric mixer.

Add cocoa powder, erythritol, almond milk.  Mix with an electric mixer.

Taste.

Add stevia to taste.  We used 5-6 drops to make this pudding the perfect amount of sweetness.

Add some berries, if your macros allow!

When you mix avocados and chocolate, you get creamy low-carb decadent deliciousness.  This recipe uses unsweetened cocoa powder for the chocolate flavor.  When you use unsweetened cocoa powder, you might want to use part erythritol and part liquid stevia to get the desired sweetness.  Erythritol is not as sweet as stevia, but could use 5-6 drops of stevia to give an splash of sweetness.
