Cream Cheese Keto Cookies

Serves: 10 (2 cookies per serving)

Per serving: 130 calories, 2 g protein, 2 g carbohydrates, 14 g fat

Ingredients

Coconut Flour - 1/2 cup

Cream Cheese - 3 tablespoons, at room temperature

Egg - 1 large

Butter - 1/ cup

Erythritol - 1/2 cup

Vanilla Extract - 1 teaspooon

Baking Powder - 1/2 teaspoon

Salt - 1/4 teaspoons

Directions:

1.  Preheat oven to 350 degrees.

2.  Make sure that butter and cream cheese are at room temperature.  Cream together the cream cheese and butter with an electric mixer.  Add egg and vanilla.  Mix well.

3.  Lay out some parchment paper.  Put the dough on the parchment paper.  Fold the parchment paper over.  Get something flat (we didn't have a bench scraper, so we used a square drink coaster) and start pulling towards you so that the dough gets tightly packed into the paper, so that you can freeze it and cut it into perfect cookies!

4.  Freeze for 20 mins.  Unwrap from paper and cut into cookies.  A serrated knife works great for this.

5.  Bake at 350 for 15 mins.  Remove when golden brown.  Coat with granulated erythritol and cinnamon or eat plain.

These keto-friendly cookies are light and fluffy.  They are so easy to make, the hardest part is trying to only eat 1-2.
