Keto Cream Cheese Cookies

Ingredients

½ cup butter, softened 

3 Tbsp cream cheese, softened 

1 large egg

1 tsp vanilla extract 

½ cup erythritol 

½ cup coconut flour 

½ tsp baking powder 

¼ tsp salt 

Directions:

  1. Preheat oven to 350 degrees F / 177 degrees C. 

  2. In medium bowl, cream together butter and cream cheese until smooth.

  3. Add egg, vanilla extract, and erythritol. Mix until well combined.

  4. Combine coconut flour, baking powder, and salt in large bowl.

  5. Slowly add coconut flour mixture to wet ingredients and mix until dough forms.

  6. Place cookie dough on parchment paper.  

  7. Fold parchment paper over dough. Press firmly with a flat utensil to compact dough,  forming a log shape.

  8. Place dough in freezer for 20 minutes.

  9. Take dough out of freezer and remove wrapping. Use serrated knife to cut log into evenly sized cookies.

  10. Place cookies on lined baking sheet and bake for 15 minutes or until golden brown.

  11. Allow to cool completely before coating cookies with your choice of sugar-free toppings.
