Ingredients
Coconut Flour - 1/2 cup
Almond Flour - 1 1/2 cups
Ground Chia, Flax, and Hemp Seeds - 1/4 cup total - any seed combination is fine
Butter - 4 tablespoons
Eggs - 4 large
Salt - 1/4 teaspoon
Baking Powder - 2 tsp
Directions:
-
Preheat oven to 350 degrees.
-
In a large mixing bowl, combine dry ingredients: coconut flour, almond flour, flax/chia/hemp seed, baking powder, salt.
-
In a smaller mixing bowl with an electric mixer, combine wet ingredients: butter and eggs.
-
Gently fold wet ingredients into dry ingredients.
-
Place dough mixture into a small pan.
-
Bake in oven for 30-40 mins. Stick a fork in the middle of it to make sure it’s done. If it comes out clean, then it’s done. If it comes out with dough on it, then it needs more time.
Tips
You can buy chia/flax/hemp seed already mixed and ground. That’s what was used for this recipe.
Try to find your smallest dish to bake this bread. It will give the bread more height, or you could double the recipe. But this bread is very filling, so if you double the recipe, you might need to freeze some of it.
