Broccoli Cheddar Fritters

Broccoli Cheddar Fritters

Serves: 4

Per serving: 225 calories, 5 g protein, 4 g carbohydrates, 21 g fat

Ingredients

Almond Flour - 1/2 cup

Baking Powder - 1/2 tablespoon

Garlic Powder - 1/2 teaspoon

Cheddar Cheese - 1/4 cup - shredded

Half and Half - 1/4 cup

Egg - 1 large

Onion - 1/2 cup - diced

Broccoli - 1 cup - steamed or boiled/run thru a blender or food processor

Oil - about 2 cups - for frying (avocado oil was used for this recipe - it has a high smoke point, which means that it will not burn as easily as an oil such as extra virgin olive oil)

Directions:

Add almond flour

Add baking powder

Add garlic powder

Mix well

In a separate bowl, mix cheddar cheese, half and half, onion, broccoli.

Mix well.

Add wet ingredients to dry ingredients.

Bring oil up to 350 degrees in a sauce pot or fryer.

Slowly drop in tablespoon-sized fritters.  Cook each side for 2-3 minutes.

Remove from oil.  Place on paper towel.  Salt heavily - immediately out of the oil, this will help to make sure that the salt sticks to your fritters.
