Ingredients

  • 2 cups kale chopped
  • 2 tablespoons lemon vinaigrette
  • ¼ cup chopped bacon (about 3 cooked strips)
  • 1 ounce cheddar cheese cubed or shredded
  • 1 egg large, hard boiled, chopped
  • 6 grape tomatoes sliced
  • ½ avocado medium, sliced
  • Salt to taste

Instructions

  • Toss 2 cups kale with 2 tablespoons lemon vinaigrette. Salt to taste to balance acidity and soften texture.

  • Top kale with ¼ cup chopped bacon, 1 ounce cheddar cheese, 1 egg, 6 grape tomatoes, and ½ avocado.

Use Dr. Berg’s Lemon Vinaigrette as a dressing for this recipe.  There is something magical that happens when you combine lemon vinaigrette and kale!!!
