This absolutely delicious keto recipe is packed with avocado, eggs, and bacon. It also has some really nice herbs that make it the perfect fresh summer meal. The fresh dill in this recipe especially kicks it up a notch.
This keto avocado egg salad is super easy to make, and even better, it's very nutritious. You could also use this exact recipe to make deviled eggs, or simply have it as a nice keto sandwich or wrap. We have some great recipes for keto-friendly bread and wraps on our blog as well.
Ingredients:
6 eggs
1 Avocado, diced
⅓ cup red onion, finely diced
6 slices of bacon, cooked crisp and chopped
2 tsp parsley, chopped
2 tsp chives, chopped
1 tbsp Dijon mustard
1 tbsp fresh dill, chopped
1 tsp lemon juice
Salt and pepper to taste
¼ cup mayonnaise
Instruction:
Put your eggs in boiling water for 12 minutes and immediately transfer to a bowl with ice water until ready.
Prepare your herbs and vegetables and set aside. Cook your bacon and chop once cooled.
Peel your eggs and chop them roughly.
In a large bowl, combine all of the ingredients and enjoy!
Serve with keto bread, on a lettuce leaf, or simply in a bowl
