This carne asada bowl recipe is an incredibly fresh, light, and tasty salad with skirt steak. Skirt steak is fattier, which is actually a lot better. The leaner the protein, the faster it will actually spike your blood sugars. There's also some avocado in this dish, which gives you even more delicious healthy fat.
Ingredients
Steak and Marinate:
1 1/2 lbs skirt steak
1/3 cup olive oil
3 limes, juiced
1/2 cup fresh cilantro, chopped
4 garlic cloves, minced
1 tsp cumin powder
1/2 tsp chili powder
salt and pepper, to taste
Salad:
Radishes, sliced thinly
Avocado, sliced
Mixed greens or Arugula
Sliced red cabbage
Additional lime wedges for garnish
Cilantro Lime Sauce:
1 cup cilantro
1/2 cup sour cream
2 cloves garlic
lime juice from 1 lime
salt, pepper, pinch of each
1/4 cup olive oil
2 tablespoons apple cider vinegar
Directions
Mix all of the marinade ingredients together in a small bowl.
Add the steak to a glass baking tray and pour the marinade on top, fully coating everything.
Cover with plastic wrap and let it sit in the fridge for an hour or more.
Heat a grill (or pan) on medium-high heat and let the grill/pan get hot before putting the steak on.
Cook steak on the grill for approximately 5-7 minutes on each side or until 143 degrees internally (if you want it medium rare).
Remove the steak to a cutting board and let it rest before slicing it into small strips.
Add all of the dressing ingredients to a food processor (or blender) and process on high until the sauce looks creamy.
Add your lettuce and vegetables in a bowl and top with steak and dressing and additional cilantro if you like.
