Keto Walnut Spice Loaf

Ingredients
½ cup / 56 g coconut flour
1 Tbsp baking powder
1 Tbsp psyllium husk powder
½ Tbsp sea salt
5 large eggs
2 Tbsp butter, melted and cooled
¼ cup / 60 mL olive oil
1 tsp cinnamon
½ tsp ginger
¼ tsp cardamom
1 cup / 150 g toasted walnuts, chopped
½ cup / 118 mL boiling water
Directions:

Preheat oven to 350 degrees F / 177 degrees C.

In a bowl, combine coconut flour, baking powder, psyllium husk powder and sea salt.

Add eggs, butter and olive oil. Stir to combine. Add cinnamon, ginger, cardamom and toasted walnuts. Stir until fully incorporated.

Add half of the hot water and stir until all water is absorbed. Add remaining water and stir again until all water is absorbed. Let dough rest 5 minutes.

Line a baking sheet with parchment and dust lightly with coconut flour.

Transfer dough to parchment-lined pan. Dust the top of the dough with more coconut flour. Form dough into a rectangular shape, about 12 x 3 inches. Make a few half-inch deep slices on the top of the dough.

Bake 35 to 45 minutes until bread is firm and evenly browned.
